Pressure Fryer Counter Top MDXZ-16 Redline

The HK-Redline MDXZ-16 is a countertop electric pressure fryer with a 16 litre pot, the machine behind broasted-style fried chicken. Cooking under pressure seals the surface quickly while the inside cooks in its own moisture, so the result is crisp outside and noticeably juicier than open frying.

The pot is 27 cm across with a 6 mm wall, and it takes between 7 and 10 litres of oil — 13 cm deep at minimum, 16 cm at maximum. Those two figures are the ones to work to: under-filling exposes the elements, over-filling risks boil-over once the lid is sealed. Working pressure is 8 psi and the thermostat runs from room temperature to 200 °C.

Control is mechanical rather than programmed. It draws 3 kW from a single-phase 220-240 V 50 Hz supply and weighs 19 kg, so unlike its floor-standing MDXZ-24 sibling it sits on a counter and needs no three-phase connection.
