Spiral Mixer 200 LITRES/75KG BM-75

The HK-Redline BM-75 is a spiral dough mixer with a 200 litre bowl, rated to knead 75 kg of dough in a batch. Spiral mixers exist for bread: the spiral tool works the dough against a rotating bowl, developing gluten quickly while putting less friction heat into it than a planetary mixer does.

Keeping dough temperature down is the whole point, because an overheated dough ferments unpredictably and bakes badly. At 75 kg a batch the BM-75 is the largest spiral mixer in this range, for bakeries and industrial kitchens producing bread continuously rather than in scheduled batches.

It draws 10.5 kW and can be supplied for 220 or 380 V, so confirm the configuration at the order stage. At 710 kg and 1460 × 905 × 1400 mm it is a permanent installation: check the floor loading and the route in before it arrives.
