Spiral Mixer 130 LITRES/50KG BM-50

The HK-Redline BM-50 is a spiral dough mixer with a 130 litre bowl, rated to knead 50 kg of dough in a batch. Spiral mixers exist for bread: the spiral tool works the dough against a rotating bowl, developing gluten quickly while putting less friction heat into it than a planetary mixer does.

Keeping dough temperature down is the whole point, because an overheated dough ferments unpredictably and bakes badly. At 50 kg a batch this is a production machine, sitting between the 25 kg BM-25 and the 75 kg BM-75 — the size for a bakery running several bread batches a day rather than occasional ones.

It draws 6.3 kW and can be supplied for 220 or 380 V, so confirm which configuration you need at the order stage. At 420 kg and 1175 × 730 × 1230 mm it is a fixed installation needing a solid floor and a planned route in.
